Growing up, my childhood friend, Janelle, and I would try to bake different recipes every other week. We’ve always been die-hard macaron lovers so we decided to give it a try! It took us several times to get feet (the little ridges on the bottom of the cookie) on our macarons and every time we successfully got them, we would get the biggest relief! Macarons are pretty difficult to make and they require some patience! But don’t give up, all it takes is a lot of practice and you’ll get a hang of it! You’ll be able to gage the consistency of the egg whites and eventually be able to make light crisp macarons! We decided to opt out of the typical cream filling and decided to sandwich the cookies with french vanilla ice cream. A little bit of blue food coloring gave the macarons a nice pop of color that is reminiscent of light blue cotton candy you would get in your childhood.
